Chilaquiles
Ingredients:
- 500g tomatillos, green
- 1/2 onion
- 4 cloves garlic
- Green chilies to taste
- Fresh cilantro
- Salt
- Neutral oil for frying
- Corn tortillas
- Sour cream or crema fresca
- Queso fresco (or preferred cheese)
- Eggs (optional)
- Avocado (optional)
- Serrano pepper (optional)
Instructions:
- In a pot, boil tomatillos with diced onion, crushed garlic, and green chilies to taste. Cook for 8-10 minutes until the tomatillos turn slightly golden.
- Once cooked, blend the tomatillos with fresh cilantro and salt. This is the base sauce.
- Cut corn tortillas into triangles and fry them in hot oil until they turn golden brown. Drain them on paper towels and season with salt immediately.
- In a skillet, combine the sauce with the fried tortilla pieces, gradually adding the sauce to avoid overly soaking the tortillas.
- Optionally, top with sour cream, crumbled queso fresco, diced onion, pre-cooked eggs, sliced avocado, and sliced Serrano pepper.
- Garnish with fresh cilantro and serve immediately.
