Ingredients:

  • 500g tomatillos, green
  • 1/2 onion
  • 4 cloves garlic
  • Green chilies to taste
  • Fresh cilantro
  • Salt
  • Neutral oil for frying
  • Corn tortillas
  • Sour cream or crema fresca
  • Queso fresco (or preferred cheese)
  • Eggs (optional)
  • Avocado (optional)
  • Serrano pepper (optional)

Instructions:

  1. In a pot, boil tomatillos with diced onion, crushed garlic, and green chilies to taste. Cook for 8-10 minutes until the tomatillos turn slightly golden.
  2. Once cooked, blend the tomatillos with fresh cilantro and salt. This is the base sauce.
  3. Cut corn tortillas into triangles and fry them in hot oil until they turn golden brown. Drain them on paper towels and season with salt immediately.
  4. In a skillet, combine the sauce with the fried tortilla pieces, gradually adding the sauce to avoid overly soaking the tortillas.
  5. Optionally, top with sour cream, crumbled queso fresco, diced onion, pre-cooked eggs, sliced avocado, and sliced Serrano pepper.
