Ingredients:
- 6 bone-in, skin-on chicken thighs
- 1 large onion, sliced
- 1 pound red baby potatoes
- 2 teaspoons oregano
- Salt and pepper, to taste
- 2 tablespoons olive oil
For the Honey Garlic Sauce:
- 2 tablespoons lemon juice
- 6 cloves garlic, minced
- 1/2 cup honey
- 1/3 cup sweet chili sauce
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon Dijon mustard
Optional for Thickening the Sauce:
- 1 tablespoon cornstarch mixed with 2 tablespoons water
Instructions:
- In a slow cooker, place the chicken thighs, sliced onion, and baby potatoes.
- Season with oregano, salt, and pepper. Drizzle with olive oil and mix well.
- In a bowl, combine all the ingredients for the honey garlic sauce.
- Pour the sauce over the chicken and potatoes in the slow cooker.
- Cover and cook on high for 4 to 6 hours.
Optional (for thickening the sauce):
- After about 5 hours of cooking, mix 1 tablespoon of cornstarch with 2 tablespoons of water.
- Add this mixture to the slow cooker and stir. Continue cooking until the desired consistency is reached.
Tips:
- Serve over yellow rice.
- You can use a kitchen torch to lightly brown the chicken skin after cooking.
