Slow Cooker Honey Garlic Chicken Thighs and Potatoes Recipe

Ingredients:

  • 6 bone-in, skin-on chicken thighs
  • 1 large onion, sliced
  • 1 pound red baby potatoes
  • 2 teaspoons oregano
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

For the Honey Garlic Sauce:

  • 2 tablespoons lemon juice
  • 6 cloves garlic, minced
  • 1/2 cup honey
  • 1/3 cup sweet chili sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon Dijon mustard

Optional for Thickening the Sauce:

  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions:

  1. In a slow cooker, place the chicken thighs, sliced onion, and baby potatoes.
  2. Season with oregano, salt, and pepper. Drizzle with olive oil and mix well.
  3. In a bowl, combine all the ingredients for the honey garlic sauce.
  4. Pour the sauce over the chicken and potatoes in the slow cooker.
  5. Cover and cook on high for 4 to 6 hours.

Optional (for thickening the sauce):

  1. After about 5 hours of cooking, mix 1 tablespoon of cornstarch with 2 tablespoons of water.
  2. Add this mixture to the slow cooker and stir. Continue cooking until the desired consistency is reached.

Tips:

  • Serve over yellow rice.
  • You can use a kitchen torch to lightly brown the chicken skin after cooking.
  • Be careful when serving as the chicken is tender and may easily fall apart.
