Salmon Pancakes
Ingredients
- 500 g fresh salmon (skinless and boneless)
- 1 green onion, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon breadcrumbs
- 1 tablespoon flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Oil for cooking
Instructions
- In a bowl, combine the salmon, green onion, parsley, breadcrumbs, flour, salt, and pepper.
- Form the mixture into 2 cm thick pancakes.
- Heat a little oil in a skillet over medium heat.
- Cook the pancakes for 3-4 minutes per side, or until golden brown and cooked through.
- Serve immediately.
Tips
- For a richer flavor, add 1 tablespoon of sour cream to the mixture.
- You can also add other ingredients to your liking, such as mushrooms, spinach, or cheese.
- Salmon pancakes can be served as a main course or as a side dish.
Variations
- Salmon and shrimp pancakes: Replace half of the salmon with cooked shrimp.
- Salmon and cheese pancakes: Add 1 tablespoon of grated cheese to the mixture.
- Salmon and vegetable pancakes: Add 1 cup of chopped vegetables, such as mushrooms, spinach, or leeks, to the mixture.
