Ingredients:
For the Batter:
- 2 eggs
- 125g sugar
- 100g butter
- 100g flour
- 1 teaspoon baking powder
For the Filling:
- 750g apples (Cox Orange)
- 2 packs custard powder
- 0.5 liter (2 cups) apple juice (for stewing the apples and making custard)
For the Custard:
- 3 eggs, separated
- 1 cup sour cream
- 5 tablespoons sugar
Instructions:
- Preheat the oven to 180 degrees Celsius (350°F).
- Prepare the Batter:
- In a bowl, combine eggs, sugar, softened butter, flour, and baking powder to make the batter.
- Pour the batter into a springform pan and bake for about 20 minutes until it sets.
- Prepare the Filling:
- Core, peel, and stew the apples in a little apple juice until tender. Drain them on a sieve.
- Bring 1/2 liter of apple juice to a boil. Stir in the custard powder as directed on the packaging, using apple juice instead of water. Fold in the stewed apples and bring the mixture to a boil until it thickens. The consistency should be sticky.
- Pour the apple-custard mixture onto the pre-baked dough, spread it evenly, and bake for an additional 5 minutes.
- Prepare the Custard Topping:
- Separate the eggs. Beat the egg whites until stiff.
- Mix the egg yolks, sour cream, and sugar together. Gently fold in the beaten egg whites.
- Spread the custard topping evenly on the partially baked cake and continue baking until the topping is golden yellow.
- Finish and Serve:
- Allow the pie to rest briefly with the oven door slightly open.
- Remove it from the tin only when it has cooled down completely.
