Salmon Pancakes

Ingredients

  • 500 g fresh salmon (skinless and boneless)
  • 1 green onion, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon breadcrumbs

  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Oil for cooking

Instructions

  1. In a bowl, combine the salmon, green onion, parsley, breadcrumbs, flour, salt, and pepper.
  2. Form the mixture into 2 cm thick pancakes.
  3. Heat a little oil in a skillet over medium heat.
  4. Cook the pancakes for 3-4 minutes per side, or until golden brown and cooked through.
  5. Serve immediately.

Tips

  • For a richer flavor, add 1 tablespoon of sour cream to the mixture.
  • You can also add other ingredients to your liking, such as mushrooms, spinach, or cheese.
  • Salmon pancakes can be served as a main course or as a side dish.
