Boil salted water and cook the pasta until al dente. Drain it and set it aside.
Preparing the chicken:
Lightly flatten the chicken breasts in a plastic bag.
Season the chicken breasts with a mix of cajun seasoning, onion powder, garlic powder, dried parsley, paprika, and Old Bay. Sear them in a pan with oil.
Making the sauce:
In the same pan, sauté the chopped onion, red bell pepper, and diced tomatoes. Add heavy cream, chicken broth, cream cheese, and seasonings (chicken broth, cajun seasoning blend). Adjust salt and pepper to taste.
Incorporate the cooked pasta into the sauce and mix well.
Assembling the dish:
Cut the seared chicken into pieces and add it to the pasta.
Sprinkle parmesan cheese over the pasta.
Tips:
Don’t overcook the chicken to keep it juicy.
Season the sauce moderately to adjust the flavor.
Add mozzarella cheese for a creamier and cheesier texture if desired.
