The cookies melt in your mouth! Good and easy to make every day!

Ingredients:

  • 2 eggs
  • 70g sugar
  • Vanilla extract, a pinch of salt
  • 100 ml oil
  • 2 tablespoons cornstarch
  • 230g flour
  • 6g baking powder

Instructions:

  1. Preheat your oven to 170°C (approximately 340°F).
  2. In a bowl, beat the eggs with the sugar until you get a frothy mixture.
  3. Add the vanilla extract, salt, and oil, and mix well.
  4. Incorporate the cornstarch, flour, and baking powder until you achieve a smooth dough.
  5. Form dough balls and place them on a baking sheet lined with parchment paper.
  6. Bake for 20 minutes in the preheated oven at 170°C (approximately 340°F) until golden brown.
  7. Meanwhile, prepare the filling by heating the cherry jam in a saucepan with a teaspoon of powdered sugar for 5 minutes.
  8. Once the cookies are baked, take them out of the oven and lightly press them to flatten. Then, return them to the oven for a few additional minutes.

After letting the cookies cool, you can fill them with the cherry jam. Enjoy!
