Ingredients:
- 2 eggs
- 70g sugar
- Vanilla extract, a pinch of salt
- 100 ml oil
- 2 tablespoons cornstarch
- 230g flour
- 6g baking powder
Instructions:
- Preheat your oven to 170°C (approximately 340°F).
- In a bowl, beat the eggs with the sugar until you get a frothy mixture.
- Add the vanilla extract, salt, and oil, and mix well.
- Incorporate the cornstarch, flour, and baking powder until you achieve a smooth dough.
- Form dough balls and place them on a baking sheet lined with parchment paper.
- Bake for 20 minutes in the preheated oven at 170°C (approximately 340°F) until golden brown.
- Meanwhile, prepare the filling by heating the cherry jam in a saucepan with a teaspoon of powdered sugar for 5 minutes.
- Once the cookies are baked, take them out of the oven and lightly press them to flatten. Then, return them to the oven for a few additional minutes.
After letting the cookies cool, you can fill them with the cherry jam. Enjoy!
