Ingredients:

For the Dough:

  • 20g fresh yeast (0.7 oz) or 5g dry yeast (0.18 oz).
  • 100ml lukewarm milk (0.42 US cups).
  • 3 tablespoons sugar.

  • 160g Type 550 flour (5.6 oz).
  • 40ml vegetable oil (2.7 tablespoons).

For the Fresh Cheese Filling:

  • 500g quark or cottage cheese (17.6 oz).
  • 2 egg yolks.
  • 1 tablespoon powdered sugar.
  • 1 tablespoon vanilla sugar.
  • 70g powdered sugar (2.5 oz).
  • 70g all-purpose flour (2.5 oz).
  • 50g butter (1.8 oz).
  • All-purpose flour.
  • 50g butter (approximately 1.8 oz).
  • Apricot jam.
  • Colorful decorations.

Instructions:

Preparing the Dough:

  1. Dissolve the yeast in lukewarm milk. Add a tablespoon of sugar and let it rest for a few minutes.
  2. In a large bowl, mix the flours, remaining sugar, oil, egg, and a pinch of salt. Then, incorporate the yeast mixture.
  3. Knead the dough until it’s smooth and elastic. Cover and let it rest in a warm place until it doubles in size.

Preparing the Fresh Cheese Filling:

  1. Mix the quark (or cottage cheese) with the egg yolks, powdered sugar, vanilla sugar, additional powdered sugar, and flour.
  2. Add the melted butter and mix until you achieve a homogeneous mixture.

Assembly:

  1. Divide the dough into equal portions and shape them into flat circles. Place a tablespoon of the fresh cheese filling in the center of each circle.
  2. Fold the edges of the dough to form small packets. Place them on a baking sheet lined with parchment paper.
  3. Let them rest for a few minutes, then brush the packets with the melted butter.
  4. Bake in a preheated oven at 180°C (356°F) for about 15 minutes or until golden brown.
