Ingredients:

  • Eggs (left at room temperature or soaked in lukewarm water if cold)
  • Sugar
  • Pinch of salt
  • Vanilla extract
  • Cake flour
  • Cocoa powder
  • Melted butter (45C to 50C / 113F to 122F)
  • Milk (35C / 95F)
  • Vegetable oil (for greasing)
  • Heavy cream
  • Chocolate for melting
  • Cocoa powder (for sprinkling)

Instructions:

  1. Mix sugar, salt, vanilla extract, cake flour, and cocoa powder until smooth.
  2. Gradually add melted butter and milk, mixing well. Strain the batter through a sieve and refrigerate for an hour.
  3. Grease a pan and pour about 75-80g batter into a 20cm (D) pan. Cook slowly over low heat. Let it cool.
  4. Cut into 18cm rings or leave as is for larger layers.
  5. Prepare chocolate cream by melting chocolate in warm heavy cream. Whip heavy cream and sugar until firm, then fold in the chocolate ganache.
  6. Layer the crepes with alternating strips of chocolate and white cream, repeating until desired height. Chill for 1-2 hours.
  7. Sprinkle with cocoa powder before serving.
