Ingredients:
- 250g butter (1.1 cups)
- 250g powdered sugar (2 cups)
- 1 tbsp vanilla sugar
- 5 eggs
- 200ml buttermilk (0.85 cups)
- 500g all-purpose flour (4 cups)
- 3 tsp baking powder
- Lemon zest
- 450g blueberries (3 cups)
Baking Instructions:
- Preheat oven to 180°C / 356°F and prepare a baking pan (29cm x 33cm / approx. 11.4 x 13 inches).
- In a bowl, cream together butter, powdered sugar, and vanilla sugar.
- Add eggs one at a time, mixing well after each addition. Stir in buttermilk.
- Gradually add flour, baking powder, and lemon zest to the mixture. Mix until combined.
- Gently fold in the blueberries.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for about 30 minutes using top/bottom heat until golden brown.
- Allow the cake to cool completely.
Cream Cheese Frosting:
- 125g butter (0.5 cups)
- 175g cream cheese (0.75 cups)
- 300g powdered sugar (2.5 cups)
- 1 tbsp lemon juice
- Cream together butter, cream cheese, powdered sugar, and lemon juice until smooth.
- Spread the frosting evenly over the cooled cake.
- Refrigerate the cake to let the frosting set.
