Ingredients:
- 2.6 lbs beef chuck
- Preferred seasoning for the meat (or salt and pepper)
- Cooking oil
- Onion
- Carrots
- Celery
- Minced garlic
- Flour
- Tomato paste
- Beef broth
- Bay leaf
- Additional seasoning (optional)
- Parsley leaves for garnish
Instructions:
- Season the beef chuck with your preferred seasoning or salt and pepper.
- Heat oil in a Dutch oven and sear the beef on all sides until browned. Set aside once done.
- In the same pot, sauté onions, carrots, celery, and garlic until tender.
- Stir in flour and tomato paste, then add the beef broth. Season to taste.
- Return the beef to the pot, add a bay leaf, bring to a boil, and then bake at 325°F (165°C) for about 2 hours until the beef is tender.
- Remove the beef from the pot and skim excess fat from the broth if needed.
- Serve the sliced beef with parsley for garnish.
