Ingredients:
- 500 grams chuck beef, cut into 2.5-centimeter cubes
- 60 grams all-purpose flour
- 1/2 teaspoon freshly ground black pepper
- 60 milliliters vegetable oil
- 60 milliliters apple cider vinegar
- 750 milliliters beef broth
- 4 bay leaves
- 1 medium onion, chopped
- 4 carrots, peeled and diced
- 4 stalks celery, chopped
- 6 potatoes, peeled and diced
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
Instructions:
- In a large bowl, mix the flour and pepper. Roll the beef cubes in the flour mixture until well coated.
- Heat the oil in a large pot over medium-high heat. Add the beef cubes in batches and cook until browned on all sides.
- Remove the beef from the pot and set aside. Add the apple cider vinegar to the pot and deglaze, scraping up the browned bits from the bottom.
- Return the beef to the pot and stir in the beef broth, bay leaves, onion, carrots, celery, potatoes, and Worcestershire sauce.
- Bring to a boil, then reduce the heat and let it simmer for 1.5 hours, or until the beef is tender and the vegetables are cooked.
- Season with salt and pepper to taste. Serve hot and enjoy!
