Chocolate Yogurt Parfaits

Ingredients:

  • 2 cups of plain Greek yogurt or unsweetened coconut yogurt
  • 2 tablespoons of unsweetened cacao or cocoa powder
  • 1/4 cup of maple syrup or raw honey
  • 1 teaspoon of vanilla or almond extract
  • 1 cup of granola
  • 2 bananas, sliced
  • 1 cup of fresh raspberries or sliced strawberries
  • Optional:
    • Protein powder
    • Mini dark chocolate chips

Instructions:

  1. In a mixing bowl, combine the yogurt, cacao or cocoa powder, and protein powder (if using).
  2. Add the maple syrup or honey along with the vanilla or almond extract. Whisk the mixture until it’s smooth and creamy.
  3. To assemble the parfaits, evenly distribute the chocolate yogurt mixture into 4 cups.
  4. Layer each cup with granola, sliced bananas, and either fresh raspberries or sliced strawberries.
  5. Optionally, sprinkle a few mini dark chocolate chips over the top for added indulgence.

Tips:

  • Experiment with different types of granola for varied flavors and textures.
  • Consider adding a scoop of your favorite protein powder to boost the protein content of the parfaits.
  • Adjust the sweetness by varying the amount of maple syrup or honey used, depending on your taste preferences.
  • For an extra touch of richness, you can garnish the parfaits with a dollop of whipped cream or a drizzle of melted chocolate before serving.
