Ingredients:
- 1 pound lean ground beef
- Salt and pepper to taste
- 3 tablespoons olive oil
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 onion, chopped
- 1 can (10 ounces) Rotel, diced tomatoes and green chiles, mild or hot
- 4 flour tortillas, softened and slightly warmed
- 1/2 cup sour cream
- 1/4 cup shredded cheddar cheese
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- Lightly warm tortillas in the microwave.
- In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
- Add olive oil, green bell pepper, red bell pepper, and onion to the skillet. Cook until vegetables are tender, about 5 minutes.
- Stir in Rotel and heat through. Season with salt and pepper to taste.
- Place a tortilla on each of 4 sheets of aluminum foil. Top each tortilla with 1/4 of the beef mixture.
- Fold the foil over the tortillas to enclose.
- Bake in preheated oven for 15 minutes, or until heated through.
- Serve immediately, topped with sour cream and cheddar cheese if desired.
Tips:
- For a spicier taco, use hot Rotel.
- Add your favorite taco toppings, such as lettuce, tomato, and salsa.
