Step 2: Crafting a roux Add butter to the skillet and let it melt. Stir in the flour, salt, and pepper; cook and continuously stir until well combined. Gradually pour in the milk, stirring constantly. Bring the mixture to a boil. Cook and stir until it thickens, taking about two minutes.
