Ingredients:
- 2 pints (~900g) cherry tomatoes
- 6 tbsp olive oil
- 8-10 cloves garlic, chopped
- 1/2 tbsp black pepper
- 1/2 tbsp salt
- 1/2 tbsp oregano
- 8oz (~227g) feta cheese
- ~150g pasta
- Optional: 1/2 tbsp chili flakes, basil, parsley
Instructions:
- Preheat oven to 400F (204C).
- Place cherry tomatoes and chopped garlic in a baking tray.
- Drizzle olive oil over tomatoes and garlic, add black pepper, salt, oregano, and optional chili flakes, then mix thoroughly.
- Place the feta cheese in the center of the tray and drizzle with a little more olive oil and seasoning on top.
- Bake in the oven for 25 minutes, then broil for an additional 5 minutes, totaling 30 minutes in the oven.
- While the cheese and tomatoes are baking, cook your pasta according to package instructions.
- Remove the baking tray from the oven and mash the roasted tomatoes and feta cheese together.
- Mix in the cooked pasta, ensuring it’s coated evenly with the tomato-feta mixture.
- Optionally, garnish with fresh herbs like basil or parsley before serving.
