Baked Feta Cheese Pasta

Ingredients:

  1. 2 pints (~900g) cherry tomatoes
  2. 6 tbsp olive oil
  3. 8-10 cloves garlic, chopped
  4. 1/2 tbsp black pepper
  5. 1/2 tbsp salt
  6. 1/2 tbsp oregano
  7. 8oz (~227g) feta cheese
  8. ~150g pasta
  9. Optional: 1/2 tbsp chili flakes, basil, parsley

Instructions:

  1. Preheat oven to 400F (204C).
  2. Place cherry tomatoes and chopped garlic in a baking tray.
  3. Drizzle olive oil over tomatoes and garlic, add black pepper, salt, oregano, and optional chili flakes, then mix thoroughly.
  4. Place the feta cheese in the center of the tray and drizzle with a little more olive oil and seasoning on top.
  5. Bake in the oven for 25 minutes, then broil for an additional 5 minutes, totaling 30 minutes in the oven.
  6. While the cheese and tomatoes are baking, cook your pasta according to package instructions.
  7. Remove the baking tray from the oven and mash the roasted tomatoes and feta cheese together.
  8. Mix in the cooked pasta, ensuring it’s coated evenly with the tomato-feta mixture.
  9. Optionally, garnish with fresh herbs like basil or parsley before serving.

Tips:

  • You can adjust the level of spiciness by altering the amount of chili flakes.
  • Don’t forget to keep an eye on the broiling to prevent burning.
  • Feel free to add other herbs or ingredients to suit your taste preferences.
