Classic Super Soft Soufflé, Tips for Success

Ingredients:

  • Eggs
  • Sugar
  • Flour
  • Cornstarch
  • Milk
  • Butter
  • Vanilla bean
  • Lemon juice
  • Powdered sugar (for decoration)

Instructions:

  1. Crack the eggs and separate the egg whites. Place the egg whites in the refrigerator.
  2. In a bowl, combine egg yolks and sugar. Whisk lightly.
  3. Sift in the flour and cornstarch. Stir until well combined.
  4. In a pot, heat milk and butter over low heat until melted.
  5. Add one-third of the warm milk to the egg yolk mixture. Stir well.
  6. Pour the egg yolk mixture back into the pot with the remaining milk. Heat over low heat, constantly stirring with an egg beater, until it becomes a paste. Pour into a bowl.
  7. Cut the vanilla bean in half and use only 1/4 of it. Add it to the egg yolk mixture. Stir well and spread it evenly. Cover with cling wrap and refrigerate for a while.
  8. Spread butter in a container with vertical edges if possible. Brush the oil upwards to help the batter rise vertically. Add sugar and rotate the container to spread the sugar evenly.
  9. When the weather is hot, put the container in the refrigerator.
  10. Preheat the oven to 190°C (375°F).
  11. Take the egg whites out of the refrigerator, add lemon juice, and beat until foamy. Then add sugar in three portions.
  12. Whisk the refrigerated egg yolk mixture slightly. Add one-third of the egg whites and whisk until evenly mixed. Add the remaining egg whites in portions.
  13. Pour the mixture into the prepared container, pouring from the center as much as possible. Smooth the surface and clean the edges of the bowl.
  14. Turn the bowl around with your thumb to facilitate the batter rising.
  15. Bake in a preheated oven at 180-190°C (356-375°F) for 15-20 minutes, depending on the size and thickness of the bowl. When the edges have risen and are no longer wet, it’s ready to be taken out.
  16. Sprinkle with powdered sugar for decoration. It can be eaten immediately.

Tips:

  • Ensure the egg whites and egg yolk mixture are at the same temperature for easier mixing.
  • When pouring the batter into the bowl, pour from the center for even distribution.
  • Rotate the bowl to facilitate batter rising.
  • Adjust baking time based on the size and thickness of the bowl. Look for risen edges and a dry texture to determine readiness.
  • Sprinkle powdered sugar for a decorative finish.
  • Enjoy the cake with its crispy texture and strong egg flavor.
