Strawberry runny pound cake

Ingredients:

  • 1 cup (about 227 grams) unsalted butter, at room temperature
  • 1 cup + 3 tablespoons (about 250 grams) white granulated sugar
  • 5 large eggs, at room temperature
  • 2 cups (about 250 grams) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • Strawberry jam, as needed

Instructions:

  1. Preheat your oven to 350 degrees Fahrenheit, then prepare a mini cake mold by greasing it and lightly coating it with flour. Set it aside.
  2. In a mixing bowl, add 1 cup (about 227 grams) of room temperature unsalted butter with 1 cup + 3 tablespoons (about 250 grams) of white granulated sugar.
  3. Mix on medium speed until creamy, and the color turns light and fluffy.
  4. With the mixer on medium-low speed, add 5 eggs one by one and beat the mixture well after each addition. The mixture might look a little curdled after adding eggs; this is okay because once you add the flour, it will all come together into a smooth batter.
  5. Measure 2 cups (about 250 grams) of all-purpose flour. To that, add 1 teaspoon of baking powder and half a teaspoon of salt. Mix the dry ingredients together, then add the flour mixture into the butter-egg mixture. Mix on low speed as you add the flour until you have a smooth batter. You want to mix the batter just until smooth with no lumps. Do not overmix the batter.
  6. To add flavor, add 1 teaspoon of pure vanilla extract and mix for a minute.
  7. Pour the batter about a quarter full into the baking mold, add strawberry jam, then add more batter to fill the jam to about three-quarters full in the mold. Repeat the same in each of the cake molds until the batter is finished.
  8. Bake the cake in the preheated 350°F oven for 40 to 50 minutes or until golden brown.
  9. Once baked, remove from the oven and let the cakes sit in the mold for about 10 minutes, then remove and line them on a wire rack.
  10. Serve them warm or cold with a cup of tea or milk.
