Cinnamon Swirl Bread Recipe

Ingredients:

  • For the Dough:
    • 160g warm milk
    • 38g white sugar
    • 3g instant yeast
    • 1 egg (around 57g, reserve 10g for later)
    • 300g bread flour
    • 3g salt
    • 28g unsalted butter, melted
    • 35g softened unsalted butter (for spreading on the dough)
  • For Topping (Optional):
    • Melted butter for brushing after baking

Instructions:

  1. Prepare the Dough:
    • In a bowl, mix warm milk, white sugar, and instant yeast. Ensure it’s well combined.
    • Add the egg (reserving 10g), and mix well.
    • Sift and add bread flour and salt. Mix until a dough forms.
    • Cover the bowl and let it rest for 20 minutes.
  2. Add Butter and Rise:
    • Microwave 28g unsalted butter for 20-30 seconds.
    • After 20 minutes, pour the melted butter over the dough and knead until well combined.
    • Cover the dough and let it rise until doubled in size.
  3. Prepare for Rolling:
    • Spread some butter in a baking pan to prevent sticking.
    • Deflate the dough to remove air bubbles.
    • Roll out the dough to about 20x35cm using a rolling pin.
  4. Create Cinnamon Swirl:
    • Spread 35g softened unsalted butter evenly on the dough, leaving some at the end.
    • Roll up the dough from the other end, pinching the edges.
    • Cover with plastic wrap and freeze for 20 minutes.
  5. Shape and Final Rise:
    • After 20 minutes, sprinkle flour on the roll and divide it into 8 parts.
    • Place the pieces alternating up and down, pressing the two ends together.
    • Place into the prepared baking pan.
    • Cover and let it rise until doubled in size.
  6. Preheat and Bake:
    • Preheat the oven to 180°C (356°F).
    • Brush the risen dough with the leftover egg wash.
    • Bake for 30-35 minutes until golden brown.
  7. Finish and Cool:
    • After baking, place the bread on a rack to cool.
    • Optionally, brush with melted butter for added richness.
  8. Enjoy:
    • Slice and enjoy the super fluffy and delicious cinnamon swirl bread!

  • Ensure the melted butter is not too hot before pouring it onto the dough.
