Cheesy Beef and Veggie Tacos

Ingredients:

  • 1 pound lean ground beef
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 1 can (10 ounces) Rotel, diced tomatoes and green chiles, mild or hot
  • 4 flour tortillas, softened and slightly warmed
  • 1/2 cup sour cream
  • 1/4 cup shredded cheddar cheese

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Lightly warm tortillas in the microwave.
  3. In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
  4. Add olive oil, green bell pepper, red bell pepper, and onion to the skillet. Cook until vegetables are tender, about 5 minutes.
  5. Stir in Rotel and heat through. Season with salt and pepper to taste.
  6. Place a tortilla on each of 4 sheets of aluminum foil. Top each tortilla with 1/4 of the beef mixture.
  7. Fold the foil over the tortillas to enclose.
  8. Bake in preheated oven for 15 minutes, or until heated through.
  9. Serve immediately, topped with sour cream and cheddar cheese if desired.

Tips:

  • For a spicier taco, use hot Rotel.
  • Add your favorite taco toppings, such as lettuce, tomato, and salsa.
