Ingredients

For the dough:

  • 300 grams of 1.5% fat yogurt (1⅓ cups)
  • 40 grams of fresh yeast (1½ oz)
  • 2 tablespoons of sugar
  • 1 tablespoon of flour

For the brioche dough:

  • 60 milliliters of vegetable oil (¼ cup)
  • 2 eggs
  • 2 tablespoons of 30% sour cream
  • 170 grams of sugar (¾ cup + 1 tablespoon)
  • 1 tablespoon of vanilla sugar
  • 800 grams of all-purpose flour (6⅔ cups)
  • A pinch of salt
  • 1 teaspoon of baking powder

For the filling and finish:

  • Flour for dusting
  • Vegetable oil for greasing
  • 150 grams of blueberries (¾ cup) + 150 grams of raspberries (1 cup)
  • 1 egg
  • Sugar for sprinkling

Instructions

  1. In a bowl, mix the yogurt, crumbled yeast, sugar, and flour. Let it rest for 10 to 20 minutes.
  2. Add the vegetable oil, eggs, sour cream, sugar, and vanilla sugar. Incorporate the flour, salt, and baking powder. Knead until obtaining a homogeneous dough. Allow it to rest in a warm place for 30 minutes until the dough doubles in size.
  3. Preheat the oven to 180°C (356°F).
  4. Divide the dough into equal portions and shape them into rolls or balls. Dust with flour and lightly grease with vegetable oil.
  5. Place a bit of berries (blueberries and raspberries) on each roll. Brush with beaten egg and sprinkle with sugar.
  6. Bake in the preheated oven for approximately 25 minutes until golden.
