I do it every time, ever since I learned this method! The most delicious cake recipe.

Ingredients:

  • 250g butter (1.1 cups)
  • 250g powdered sugar (2 cups)
  • 1 tbsp vanilla sugar
  • 5 eggs
  • 200ml buttermilk (0.85 cups)
  • 500g all-purpose flour (4 cups)
  • 3 tsp baking powder
  • Lemon zest
  • 450g blueberries (3 cups)

Baking Instructions:

  1. Preheat oven to 180°C / 356°F and prepare a baking pan (29cm x 33cm / approx. 11.4 x 13 inches).
  2. In a bowl, cream together butter, powdered sugar, and vanilla sugar.
  3. Add eggs one at a time, mixing well after each addition. Stir in buttermilk.
  4. Gradually add flour, baking powder, and lemon zest to the mixture. Mix until combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake in the preheated oven for about 30 minutes using top/bottom heat until golden brown.
  8. Allow the cake to cool completely.

Cream Cheese Frosting:

  • 125g butter (0.5 cups)
  • 175g cream cheese (0.75 cups)
  • 300g powdered sugar (2.5 cups)
  • 1 tbsp lemon juice
  1. Cream together butter, cream cheese, powdered sugar, and lemon juice until smooth.
  2. Spread the frosting evenly over the cooled cake.
  3. Refrigerate the cake to let the frosting set.
