Introduction: Irish Guinness beef stew is a comforting and delicious dish. Guinness beer gives it a rich and deep flavor, while the beef becomes tender and flavorful after long, slow cooking.

Ingredients:

2 tablespoons olive oil 2 lb / 900 g beef, cut into large pieces Salt and black pepper for seasoning 2 cloves garlic 2 onions 6 ounces / 170 g bacon (optional) 2 carrots 2 celery stalks 3 tablespoons flour 14.9 ounces / 440 ml Guinness beer 3 tablespoons tomato paste 3 cups / 750 ml broth 2 bay leaves 1 teaspoon thyme

Instructions:

Brown the beef pieces in oil until well colored. Season with salt and pepper, then set aside. Cook garlic, onion, and optionally bacon in the same pot. Add carrots and celery, then stir in the flour to thicken. Pour in the beer, broth, tomato paste, herbs, and reintroduce the beef into the pot. Simmer for about 2 hours until the beef is tender. Remove the lid and let it cook for another 45 minutes to thicken the sauce.

Tips:

Serve with pasta, mashed potatoes, or your preferred side dish. For deeper flavor, simmer for a longer time.
