Bacon Cheeseburger Casserole
Ingredients:
- 2 pounds ground beef
- 1 large onion, chopped
- 2 garlic cloves, minced
- 12 cooked and crumbled bacon strips
- 3 cups shredded cheddar cheese, divided
- 8 large eggs
- 1 can (6 ounces) tomato paste
- 1 cup heavy whipping cream
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Optional toppings: Dill pickle slices, thinly sliced green onions, slices of red onion, halved cherry tomatoes
Directions:
- Preheat the oven to 350°F. In a large skillet, cook beef, onion, and garlic over medium heat until beef is no longer pink and onion is tender, about 10-12 minutes. Break up beef into crumbles while cooking; drain excess fat.
- Transfer the cooked beef mixture to a greased 13×9-inch baking dish. Sprinkle with bacon and 1 cup of cheddar cheese. In a large bowl, whisk together eggs, tomato paste, heavy cream, Worcestershire sauce, salt, and pepper until well combined. Pour the mixture over the beef. Sprinkle with the remaining 2 cups of cheddar cheese.
- Bake, uncovered, until set and golden brown, approximately 30-35 minutes. Let it stand for 10 minutes before serving. Garnish with optional toppings as desired.
